Crispy Skillet Quesadillas with Charred Salsa
Golden, crackly, and loaded with melty cheese and black beans — the weeknight hero that costs about two dollars a serving. The salsa comes together in the same pan while the quesadilla crisps, because efficient cookware is self-care.

The crisp secret
Oil the tortilla, not the pan. A thin brush of olive oil on the outside of each tortilla fries directly against the hot skillet and shatters the way a restaurant tortilla does. Medium heat, patience, one flip.
Ingredients
- 4 large flour tortillas; 8 oz sharp cheddar or a cheddar-mozzarella mix, grated
- 1 cup cooked black beans; 1 teaspoon cumin; sliced scallions
- 4 cherry tomatoes, 1 jalapeño, 1 garlic clove, lime, and cilantro for the salsa
Method
- Char the tomatoes, jalapeño, and garlic in a dry skillet over high heat until blistered. Blend with lime, cilantro, and salt.
- Brush a tortilla with oil, lay it oil-side down, and build: cheese, beans with cumin, scallions, more cheese, second tortilla brushed with oil on top.
- Cook on medium for 3–4 minutes a side, pressing gently, until deep gold and molten inside.
- Rest two minutes, cut into wedges, and pile the warm charred salsa alongside.
Grate the cheese yourself. The anti-caking starch in bagged shreds works against the melt.
